Corn Starch
Corn starch, also called corn starch, is a product obtained from the wet milling process of corn. The kernels (kernels) of corn are placed in a solution of sulfur dioxide. Once softened, the grains are subjected to a cycle of grinding and centrifugation in which the starch and gluten separate. For this reason, corn starch is well tolerated by people with celiac disease. However, it is important that the product is marked as suitable for celiacs, as in many factories corn starch can come into contact with wheat flour or other products that contain gluten.
It appears as a very fine white flour which, when in contact with boiling water, forms a paste which, as it cools, gels.
