Chives, Allium schoenoprasum L. is a perennial plant that belongs to the Liliaceae family. Small in size, it is very widespread in home gardens, but also present in the spontaneous state, it is a rustic bulb plant and does not need much care, it grows well in calcareous, rich and humid soils. The fragrant and crunchy leaves of chives are used and can be harvested all year round by cutting them at the base.
Known since ancient times, chives are mentioned in numerous recipes by Apicius, but only in the Middle Ages did they begin to be cultivated for their gastronomic use. The Celtic people attributed magical properties to it and used it to remove the evil eye.
