01 Description

Mace, also called mace or nutmeg flower, is a culinary spice, native to the Molucca islands. It is a part of the fruit of Myristica fragrans Gronov., an evergreen tree, which can reach a height of 20 m. In particular, mace is the internal part of the fruit (endocarp) and covers the seed, which constitutes the best-known nutmeg, another spice obtained from the same plant.

Mace is bright red in fresh fruit, it becomes orange when dried, the flavor is more delicate than nutmeg. In the kitchen it is used for savory dishes composed of light and bright colours, yellow or orange, similarly to saffron, as well as in the preparation of spice mixtures, in spiced vinegars, for preserving vegetables or in the preparation of home liqueurs such as nocino. It is pleasant in cheese sauces and freshly grated.
