01 Description

Celeriac is a variety of celery belonging to the botanical family of umbelliferae, classified as Apium graveolans rapaceum variety. The initial part of the root is very enlarged, to the point of forming a compact globe of approximately 15-20 cm in diameter. This portion of root is white and firm inside. It is edible and has a taste similar to that of celery sticks, which it can replace when used. This particular vegetable, known and cultivated only in some areas of northern Italy, is considered a vegetable of secondary importance, being considered a niche product. On the other hand, celeriac is well known in northern European countries, where cultivation extends over very large areas and where there is a consolidated market for both fresh and processed products.
