01 Description

The leek, common name of Allium porrum, belongs to the same botanical family (Gigliacee) as the onion, which however it resembles more in flavor than in appearance.

Native of the Mediterranean regions, the leek is a herbaceous plant that grows every two years, whose leaves, white in the basal portion and green towards the top, overlap and form a cylindrical structure, more or less large depending on the variety, which is found partly under the surface of the soil. It is about sixty centimeters tall and has reddish umbrella-shaped flowers. The white part of the leaves is preferably consumed. The leek returns in summer or winter, depending on the variety. It is widely cultivated throughout Italy: it is sown in winter with transplanting in spring for summer crops, in March-April with transplanting in April-May for autumn crops. Often the plants, after harvesting, are subjected to bleaching in pits to improve their quality.
