01 Description

Shrub from the Mediterranean basin. It is used to flavor meat and fish and, in particular, is indispensable in grills and roasts. The leaves contain camphor oil and, for this reason, it can be used as a moth repellent. The word derives from the Latin "rosmarinus" sea dew. It is a bush that grows spontaneously on rocky and limestone soils along the Mediterranean coasts and its scent recalls that of pine forests on hot days. It is among the most common aromatic herbs, especially for roasts, and is used in both Italian, French, Spanish and Greek cuisine. If dosed appropriately it is excellent not only with grilled and roasted meat, but also with fish and all meat dishes flavored with garlic, wine and vinegar. Generally it is used in sprigs, but also finely chopped leaves alone.
