01 Description

Seeds of an umbellifera, with a flavor similar to caraway but more intense. It is cultivated in many regions and is used in Central European, Indonesian, Indian, Mexican, North African and North American cuisines. It has a particular flavor with goulash and chilli con carne.

Cultivated fennel is a much smaller plant and the bud is used, i.e. the part that grows in the ground and is eaten both raw and cooked. It has very good nutritional properties, is rich in antioxidants, mineral salts, fiber and is digestive. Another well-known use is that of fennel seeds, called diachenes. They contain many flavoring essential oils so they are used to flavor other foods, for example cheeses, soups and stews, and liqueurs are also made from them.
