Celery is a biennial herbaceous species usually cultivated in an annual cycle. It belongs to the Apiaceae family, is native to the Mediterranean area and was known as a medicinal plant since the time of Homer. Celery has always been used as a diuretic, digestive and natural remedy against cramps. The dulce variety have a thin and straight root system, while the rapaceum one presents an enlargement of the root. The leaves of the dulce variety are fleshy and have a petiole which is covered by ribs along its entire length. It blooms in June-July. It has an umbrella and white-green inflorescence. The fruit is of diachenium type which means that it contains seeds.
