Olive oil is obtained from the fruits -drupe- of the olive tree which bel to the Dicotiledonee, family Olacee, genus olea, species olea europaea L. Olive oil is obtained from the cold pressure of the olive pulp. As we all know, it is a fluid-looking oil with a characteristic aroma and its colour ranges from golden yellow to green. It is one of the richest oil when it comes to oleic acid -about 62%. As oleic acid is the most aboundant element of the long chain of monounsaturated fatty acids present in our body, olive oil has great nourishing and emollient properties. Olive oil also contains about 15% linoleic acid, 15% palmitic acid and 2% stearic acid.
