Stevia Rebaudiana Bertoni can be considered one of the most useful plants for human health. In Paraguay cultivation is widespread, but with extreme respect for nature. Stevia, in its natural habitat, does not have particularly aggressive enemies and therefore does not require any chemical products for its defense. This is a guarantee of the "naturalness" of the product. But in order to be defined as organic and healthy, the extraction of glycosides must also be done in a natural way. There are two very distinct systems in Paraguay. The artisanal one, which extracts glycosides using warm water and the industrial one which uses both warm water and edible alcohol. However, a declaration is issued relating to cultivation without chemical auxiliaries of any kind.
The cultivation of Stevia follows the dictates and specifications of the CaPaSte, the Paraguayan Stevia Chamber which carries out controls on production by issuing authorizations for use by extraction, and follows the Mercosur and ISO9200 standards. The EU directives on sweeteners are obviously always observed.
