Amaranth is a plant that has several species, native to Central America, where it was already cultivated since pre-Columbian civilizations.
Rich in proteins, up to 16%, with high biological value, amaranth, compared to cereals, contains twice as much lysine, an essential amino acid which almost all cereals lack. It has a high content of calcium, phosphorus, magnesium and iron. Thanks also to the high fiber content, it has an explosive effect on digestion and metabolism. Being gluten-free, it is suitable for the diet of those suffering from celiac disease or intestinal problems, but also for children during the weaning period.
