Teff

Teff is a cereal native to Ethiopia and Eritrea, where it is still grown and is an important aliment for local population. The term "tef" come from Amharic language and means "lost". This probably because of the extreme ease of losing the very fine seeds it produces. Teff is an annual plant from which is derived a flour (Teff flour) used to prepare Teff bread, a typical dish in Eritrean cuisine. Mainly due to its interesting nutritional profile, teff popularity has been expanding in recent years as many teff products have been placed on the market worldwide. These products include pasta, bread, biscuits and malt.
