Chickpea

Their botanical name -cicer arietinum- comes from the Latin word "aries" due to the shape of the seed which vaguely recalls the head of a ram. Chickpeas are commonly found in the Middle East and India. Compared to other legumes, they have a slightly higher fat content -around the 6%. This characteristic increases the energetic value of chickpeas, gives them a softer texture and makes them tastier, especially when they are roasted -which is a typical preparation in southern Italy. Chickpeas are generally eaten mainly in soups, alone or with pasta.
